ITC Kakatiya to Host 79th Independence Day Brunch at Deccan Pavilion

ITC Kakatiya in Hyderabad will host a special buffet brunch at its Deccan Pavilion restaurant on August 15, 2026, to mark India’s 79th Independence Day. Curated by Chef Arvind Singh, the culinary event will take place from 12:30 pm to 2:45 pm, bringing together regional dishes, ingredients, and traditional cooking styles from across the country.
Designed as a celebration of India’s culinary diversity, the Independence Day brunch aims to reflect the nation's spirit of unity in diversity by uniting distinct regional culinary identities under one roof. The special menu takes guests on a journey across various states, spanning from the valleys of Kashmir down to the coastline of Kerala.
The dining experience opens with Kashmiri Yakhni Shorba, a delicate and aromatic preparation showcasing the flavours of Kashmir. The spread also highlights Himalayan home-style cooking with Uttarakhand’s Aloo Jhakya, reflecting the distinctive flavours of the region.
Lentil dishes from different parts of India feature prominently on the menu. Rajasthan is represented by Dal Tinmela, while Gujarat is featured through Dal Dhokli, a combination of spiced lentils and handmade wheat dumplings. From eastern India, Odisha’s traditional cuisine is represented by Dalma, made with lentils and vegetables.
For main courses, coastal cooking from southern India is represented through Kerala’s Malabar Fish Curry, combining fish, coconut, and aromatic spices. The culinary selection then moves to local flavours of the Deccan with Hyderabadi Kacche Gosht Ki Biryani, in which marinated meat and fragrant rice are cooked together using the traditional dum technique.
To complete the meal, the dessert counter features regional sweet items, including Rajasthani Ghevar and Maharashtrian Shrikhand.
Speaking on the curated menu, Chef Arvind Singh said, “For me, Indian cuisine has always been a story of people, places and traditions coming together. Every region has its own identity, yet there is a beautiful thread that connects them all. Through this brunch I wanted the guests to travel across India through its flavours and discover the diversity, warmth and soul that make our cuisine truly extraordinary.”
